Method
In large saucepan, heat oil over medium-high heat. Add sausage; cook, breaking up meat with wooden spoon, until golden brown, about 3 minutes. Add mushrooms, carrots, onions, garlic and oregano; cook, stirring, about 5 minutes. Season with salt and pepper.
Reduce heat to medium. Add flour; cook, stirring constantly, 1 minute. Pour in broth; increase heat and bring to boil, scraping up browned bits from bottom of pan with wooden spoon. Reduce heat to medium; add tortellini. Cook until
al dente, 6 to 8 minutes. Add spinach; cook until softened, 1 minute. Sprinkle with basil and Parmesan, if using.
