On each crêpe, place 1 slice chicken; top with 1 slice cheese. Spread each with about 1/2 tsp (2 mL) mustard. Roll up crêpes tightly. Wrap each in plastic wrap and refrigerate for 1 hour. (Make-ahead: Refrigerate for up to 24 hours.)Trim ends; cut crêpes crosswise into quarters; stand each upright or stack on platter.
