In skillet, heat oil over medium-high heat; sauté spinach, garlic, salt and pepper until wilted and no liquid remains.In large bowl, stir together spinach mixture, bread, onions, cheese and ham. Spread in greased 8-inch (2 L) square glass baking dish.
In bowl, whisk together eggs, milk and mustard; pour over bread mixture and let stand for 20 minutes, or cover and refrigerate for up to 24 hours.
Bake in 375°F (190°C) oven until puffed and golden, about 45 minutes.
