Sprinkle ribs all over with salt and pepper; place in roasting pan. Add onion, garlic, bay leaves, dark ale, beef broth, water, Worcestershire sauce and mustard; spoon some of the sauce over ribs.Cover and roast in 325°F (160°C) oven for 1 hour. Uncover and cook, basting every 30 minutes, until meat is tender enough to fall off the bone and sauce clings to ribs, 2 to 2-1/2 hours.
Place ribs on greased grill over medium-high heat; close lid and cook until crisp outside, about 10 minutes.
