Trim top off garlic to expose cloves. Place on small square of foil and drizzle with oil; seal package. Roast in 375°F (190°C) oven until tender, 50 to 60 minutes. Let cool enough to handle; squeeze out cloves into bowl. Add cheese and pepper; mash until blended.Rinse olives; pat dry. Using piping bag with large round tip (or sealable plastic bag with corner snipped off), pipe filling into olives. (Make-ahead: Cover and refrigerate for up to 3 days.)
