Sprinkle roast all over with salt and pepper. In small bowl, mix together parsley, garlic and oil to form paste; rub all over roast. (Make-ahead: Cover and refrigerate for up to 24 hours.)Place roast on rack in small roasting pan; roast in 325°F (160°C) oven until meat thermometer inserted into centre registers 160°F (71°C), about 2 hours. Tent with foil and let stand for 10 minutes before slicing. Makes 6 servings.
