In nonstick skillet, heat oil over medium heat; cook potatoes, paprika and half each of the salt and pepper, stirring occasionally, until potatoes are tender and golden, about 45 minutes.Stir in pork and green onions; cook, stirring, until heated through, about 5 minutes. Using slotted spoon, transfer to bowl; keep warm.
Drain fat from pan; wipe clean. Melt butter over medium heat; cook eggs until whites are set but yolks are still runny, about 3 minutes, or until desired doneness. Sprinkle with remaining salt and pepper. Serve over potato mixture.
