Simple syrup gives this iced tea just the right amount of sweetness and blends perfectly (no gritty sugar at the bottom). Slices of fresh ginger add a bit of kick to this otherwise fruity mixture.

In large heatproof measure or bowl, steep tea in boiling water for 6 minutes. Discard bags.Meanwhile, in saucepan, bring sugar, ginger and 1/2 cup water to boil. Reduce heat to medium-low; simmer, stirring, until fragrant and sugar is dissolved, 5 to 6 minutes. Add to tea; let cool. Cover and refrigerate until cold, about 2 hours. Strain into large pitcher. (Make ahead: Refrigerate for up to 24 hours.)
Stir in ice water, peach nectar and peaches. Add mint.
