Method
Grease 8-inch (2 L) square metal cake pan; set aside.In large bowl, beat butter with sugar until fluffy; beat in egg and vanilla. In separate bowl, combine flour, baking powder, salt and ginger; stir into butter mixture. Mix in fruit, almonds and raisins. Spread in prepared pan.
Bake in centre of 350°F (180°C) oven for 25 to 30 minutes or until tester inserted in centre comes out clean. Let cool in pan on rack.
Orange Icing: In bowl, blend sugar with butter; stir in orange juice concentrate until smooth. Spread over base.
Store in airtight container at room temperature for 2 days before cutting into squares. (Make-ahead: Layer between waxed paper in airtight container and freeze for up to 1 month.)
