Although this is not your grandmother's ordinary eggnog recipe, it is equally warm, rich and festive. The rum extract adds the familiar flavour, and you can omit the alcohol for a kid-friendly version. For an extra-indulgent twist, grate dark chocolate over the foamy top.

In small saucepan, heat milk over medium-high heat until steaming and bubbles form around edge.Meanwhile, in bowl, whisk egg yolks with sugar until pale. Whisk in about half of the milk in thin steady stream; stir back into pan. Cook, stirring occasionally, until thickened enough to lightly coat back of spoon, about 3 minutes. Stir in vanilla and rum extract. Stir in bourbon (if using). Pour into 3 mugs.
Whip cream; dollop onto each drink. Sprinkle with nutmeg.
