Method
In saucepan, heat oil over medium-high heat; fry almonds until golden, 1 to 2 minutes. With slotted spoon, transfer to paper towel.Add onion to pan; fry until softened and golden, about 6 minutes.
Add couscous; cook, stirring, for 1 minute. Stir in broth and water; bring to boil. Stir in apricots and raisins. Reduce heat to medium-low; cover and simmer until no liquid remains, about 18 minutes.
Stir in olives and almonds.
