In large saucepan, melt together caramel cubes, butter and water over medium-low heat, stirring constantly, until smooth. Remove from heat.Stir in peanut butter and vanilla until smooth. Stir in chow mein noodles and peanuts.
Working quickly, drop by heaping 1 tbsp (15 mL) onto parchment paper–lined baking sheets; let cool until firm, about 30 minutes.
