In bowl and using fork, mash together cream cheese, sugar, lemon rind, lemon juice and vanilla until smooth. Spread over 6 of the pound cake slices. Sandwich with remaining slices.In large nonstick skillet, melt half of the butter over medium heat; cook half of the sandwiches, turning once, for about 3 minutes or until edges are crisp and golden. Repeat with remaining sandwiches.
