Broil or grill sausage over medium-high heat, turning occasionally, until browned andno longer pink in centre, 18 to 20 minutes. Slice thickly.
Meanwhile, in large bowl, whisk together oil, vinegar, mustard, honey, salt, pepper and thyme.
Add escarole, endive, carrot, apple, cucumber, walnuts and onion to bowl. Add sausage and toss to coat.
