Method
Spicy Tofu In deep skillet, heat oil over medium heat. Add onion, garlic and ginger; cook, stirring, 3 minutes. Stir in soy and oyster sauces, sugar, hoisin and fish sauces, and sriracha, if using. Add tofu; toss to coat well. Simmer until sauce has thickened, about 20 minutes (if necessary, stir in 1 tbsp cornstarch and cook for 2 minutes).
Noodles & Vegetables Meanwhile, in large saucepan of boiling salted water, cook noodles according to package directions. Drain, rinse under cold water, drain again; set aside.
In wok or large skillet, heat oil over medium heat. Add pepper and carrot; cook, stirring, 2 minutes. Add spinach; cook, stirring, 1 minute. Add reserved noodles and Spicy Tofu, stirring gently to coat; cook 3 minutes. Remove skillet from heat; sprinkle with green onions and almonds. Serve with lime wedges.
