Method
Cut green onions in half lengthwise, then into 2-inch long pieces; cut pieces into julienne strips. Set aside.
In large bowl, combine 1 tbsp of the oil, ginger, garlic and pepper. Add cod; mix gently to coat. Season with salt.
In large skillet or wok, heat 1 tsp of the remaining oil over high heat; cook half of the green onions, stirring, until golden brown, about 2 minutes. Using slotted spoon, transfer onions to paper towel-lined plate. In same skillet, heat remaining oil over medium-high heat; cook cod for 2 minutes. Turn cod over. Add remaining green onions to skillet; cook, stirring occasionally, for 2 to 3 minutes or until cod flakes when tested with fork. Sprinkle with reserved green onions.
