A smoky and spicy marinade brings out the best in lean flank steak. To make supper come together even faster, marinate the steak up to 8 hours ahead—just don't add the salt until you're ready to grill, as it will dry out the beef. Method

In bowl, stir together 1 tbsp vegetable oil with garlic, brown sugar, cumin, chili powder, 1/2 tsp salt and 1/4 tsp pepper; rub all over steak. Let stand for 15 minutes.

Place on greased grill over medium-high heat; close lid and grill, turning once, until medium-rare, about 8 minutes. Let stand for 5 minutes. Thinly slice against the grain before serving.
