Brush 2 tsp (10 mL) of the oil over chicken; season with half each of the salt and pepper. Place on greased grill over medium-high heat or 6 inches (15 cm) from broiler; close lid and grill or broil until no longer pink inside, turning once, about 12 minutes. (Make-ahead: Let cool; wrap and refrigerate for up to 24 hours.) Cut into thin strips.
Meanwhile, in large bowl, whisk together mayonnaise, garlic, lemon juice, mustard, anchovy paste and remaining oil, salt and pepper. Peel and halve cucumber lengthwise; with spoon, scoop out fleshy core. Thinly slice crosswise; add to bowl along with lettuce, radishes, onions, breadsticks and chicken; toss to coat.
