Canadian Asiago Herb Butter: In bowl, mash together asiago cheese, butter, shallot, parsley and lemon rind and juice. Scrape onto plastic wrap; roll up tightly to form 2-inch (5 cm) wide log, twisting ends to seal. Refrigerate until firm, about 1 hour (if desired).Sprinkle steaks with salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, until medium-rare, about 10 minutes. Transfer steaks to platter and tent with foil; let stand for 5 minutes. Transfer to plates. Scoop or slice butter; place on steaks.
