Method
In large skillet over medium-high heat, cook sausage meat, stirring often, 3 minutes. Add garlic and Italian seasoning; continue cooking until meat is golden, about 2 minutes. Drain fat from skillet. Add tomatoes, crushing with wooden spoon. Season with salt and pepper.
Bring to a boil, reduce heat to medium and simmer until sauce has thickened, about 10 minutes. Meanwhile, in large saucepan of boiling salted water, cook pasta until al dente, 8 to 10 minutes. Add peas 2 minutes before end of cooking time. Reserving 1/2 cup of cooking liquid, drain pasta and peas. Return pasta and peas to saucepan. Add sauce and reserved cooking liquid; toss to coat. Sprinkle with parsley and Parmesan, if desired.
