Method
Place potatoes in large saucepan; pour in enough water to cover potatoes. Cover and bring to boil; reduce heat and simmer until tender, about 15 minutes. Drain well.
Preheat oven to 400°F. Spread potatoes in single layer on baking sheet; flatten slightly with fork. Bake until golden brown, about 5 minutes. In bowl, mix together butter, mustard, thyme and garlic; drizzle over potatoes.
Return potatoes to oven, stirring halfway through cooking time to coat well with butter mixture, until potatoes are golden brown, about 5 minutes. Season with salt and pepper. Garnish with sprinkle of thyme.
