Method
In large skillet, heat oil over medium-high heat. Add onion and garlic; cook, stirring occasionally, until golden, about 3 minutes. Stir in curry paste and rice. Add broth, scraping up browned bits from bottom of pan with wooden spoon. Season with salt and pepper. Bring to boil. Reduce heat, cover and simmer until rice is tender, about 15 minutes. Add lentils and kale; cook, stirring, until softened, 2 minutes. Top with cilantro, if desired.
