If you aren't fond of blue cheese, substitute sharp Canadian Cheddar cheese. Have the ham sliced at the deli counter so that it is a little thicker than the pre-sliced variety.

Slice leeks lengthwise in half; slice thinly crosswise. In skillet, bring leeks, broth, butter and salt to boil; reduce heat to medium-high and cook, stirring often, until no liquid remains and leeks are tender, about 8 minutes. Let cool.Place 1 slice cheese on each slice ham. Divide leek mixture over cheese; roll up into cylinders. Place, seam side down, in buttered baking dish. Bake in 400°F (200°C) oven until hot and cheese is oozing slightly, about 15 minutes.
Meanwhile, in small skillet or saucepan, whisk together cornstarch, pepper and half of the milk to make smooth paste; whisk in remaining milk. Heat over medium heat, stirring, until simmering. Stir in blue cheese; simmer, stirring, until smooth. Remove from heat; stir in mustard.
To serve, spoon sauce over ham rolls. Sprinkle with chives (if using).
