apple cider vinegar
2 teaspoons
Dijon mustard
1/4 teaspoon
paprika
1 pinch
salt
1 pinch
pepper
1 pinch
sugar
4 cups
baby spinach
1 cup
thinly sliced mushroom
4
slices bacon cooked and chopped
1/4
small red onion thinly sliced
1/4 cup
sunflower seed if desired
2
hard-cooked eggs quartered
Method
In large bowl, whisk together olive oil, vinegar, Dijon mustard, paprika, salt, pepper and sugar. Add spinach, mushrooms, bacon, onion and sunflower seeds (if desired); toss to coat. Garnish with eggs.
