Method
In saucepan, melt butter over medium heat. Add shallot, salt and pepper; cook until softened, about 1 minute.Stir in basmati rice, chicken broth and water; bring to boil. Reduce heat, cover and simmer until rice is tender and no liquid remains, about 15 minutes. Let stand, covered, for 5 minutes.
Stir in pistachios, cranberries and parsley.
