Crisp, smoky quesadillas are the ultimate quick dinner but also make a great party appetizer. You can just as easily make them on the grill as in a skillet. Just brush the outside with olive oil before grilling.

In large bowl, combine beans, tomato, corn, green pepper, green onions and salt; stir in cheese. Divide among halves of each tortilla; fold uncovered half over filling.Brush large skillet with half of the oil; heat over medium heat. Cook 2 quesadillas, turning once, until golden and crisp, about 6 minutes. Cut in half. Repeat with remaining quesadillas.
Serve with salsa.
