Method
In saucepan, combine beer, onion and thyme. Bring to boil over medium heat. Reduce heat to medium-low, cover and cook about 8 minutes. Add cauliflower; cook, covered, until softened,
2 to 3 minutes.
Using slotted spoon, remove cauliflower from saucepan and set aside. In same saucepan, add maple syrup and mustard; simmer until reduced by half. Season with salt and pepper.
Preheat barbecue to medium heat (about 350°F); grease grill. Cut sausages into 2-inch lengths. On metal or soaked wooden skewers, thread sausage alternating with cauliflower florets.
Place skewers on grill, close lid and cook, turning regularly during grilling time, until sausages are browned on the outside and cooked through inside, about 10 minutes. Transfer skewers to plate. Drizzle with onion mixture and sprinkle with parsley.
