Keeping your appetizers fresh
We asked Test Kitchen Food Specialists Amanda Barnier and Irene Fong how they keep appetizers fresh at a party. Here’s what they had to say:
• Make sure the food doesn't spoil. Keep cold appetizers in the fridge until the last minute.
• Give appetizers a four hour window. Don't bring everything out all at the same time, keep fresh ones in reserve and replace them as they run out.
• Serve temperature sensitive appetizers on a plate over crushed ice, or hot ones on warm plates.
