Method
Preheat oven to 375°F. Place tomatoes cut side up on rimmed baking sheet. Drizzle with 2 tbsp of olive oil and season with salt and pepper. Bake for 30 minutes.
In large saucepan, heat remaining oil over medium-low heat. Add onion and cook, stirring occasionally, about 5 minutes. Add roasted tomatoes and juices, bay leaves, broth and tomato paste. Bring to a boil. Reduce heat and cook for 30 minutes.
Using handheld or immersion blender, purée sauce until smooth. Add gin and nutmeg and cook over medium heat, about 5 minutes. Remove from heat and stir in cream. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days or frozen for up to 3 months.)
