Last-minute Thanksgiving recipes
Thanksgiving sneak up on you again this year? No problem. The Canadian Living Test Kitchen created some delicious harvest recipes that will leave your guests thinking you've been preparing for weeks. Use all the quick recipes below for a grand Thanksgiving feast, or add one or two to your existing menu for an easier yet still elegant dinner.
Steamed Green Beans
Tossed with red peppers, these green beans are the perfect side dish to any holiday meal.
Ingredients:
1 lb (454 g) green beans, trimmed
1 sweet red pepper
2 tsp (10 mL) vegetable oil
2 tbsp (25 mL) chopped fresh basil
1/4 tsp (1 mL) salt
Pinch pepper
Preparation:
In steamer over simmering water, steam green beans just until tender-crisp, 5 to 7 minutes.
Meanwhile, seed, core and cut red pepper into strips. In large nonstick skillet, heat oil over medium heat; cook red pepper, stirring, until tender-crisp, about 2 minutes.
Add green beans, basil, salt and pepper; toss to combine.
Mashed Sweet Potatoes
Ingredients:
4 sweet potatoes, peeled and cubed
1/4 cup sodium-reduced chicken stock
1/2 tsp pepper
2 green onions, sliced
Preparation:
In large saucepan of boiling salted water, cover and cook potatoes until tender, about 10 minutes. Drain and return to pot. Add chicken stock and pepper; mash until smooth.
Serve sprinkled with green onions.
