Method
Line small rimmed baking sheet with parchment paper. In bowl, combine oats, chocolate, pumpkin seeds, cranberries, honey, coconut and cinnamon; spread over bottom of prepared pan. Top with another sheet of parchment paper.
Using rolling pin, roll out mixture to 1-inch thickness. Refrigerate until mixture has hardened, about 4 hours. Cut into bars. (Make-ahead: Can be stored at room temperature for up to 1 week or frozen for up to 1 month.)
Test Kitchen Tip: If the honey is hard in consistency, dip the bottle in hot water (below 110 ̊F). Avoid using the microwave.
