Made with chia seeds and naturally sweet dates, these treats are a great pick-me-up for when you hit a mid-afternoon energy slump. Packed with fibre, they're a healthier snack to tide you over until dinner.

Coarsely chop dates. (If dates are dry, place in large microwavable bowl; cover with water and microwave on high until softened, 1 to 2 minutes. Drain well.)
Meanwhile, in food processor, pulse almonds with pecans until coarsely chopped. Add dates, chocolate chips, lime zest, lime juice, chia seeds and salt. Pulse until finely chopped and mixture starts to form ball.
Roll date mixture into 14 balls. Place coconut in shallow dish. Roll each ball in coconut, pressing gently to adhere. (Make-ahead: Refrigerate in single layer in airtight container for up to 5 days or store in freezer for up to 1 month. Bring to room temperature before rolling in coconut or sprinkles.)
Tip from The Test Kitchen: If the date mixture won't combine in the food processor, add water one tablespoon at a time to soften it up.
