In large bowl, beat together butter, brown sugar and granulated sugar until fluffy; beat in egg, then vanilla.In separate bowl, whisk together flour, baking soda and salt; stir into butter mixture. Stir in white chocolate, pistachios and cranberries.
Drop by heaping 1 tsp (5 mL) onto parchment paper–lined baking sheets. Bake in 350°F (180°C) oven until golden, 10 to 12 minutes. Let cool on pans on racks.
