In large bowl, beat together butter, sugar and lemon rind until fluffy; beat in egg yolks and egg, 1 at a time.In separate bowl, whisk together flour, cornmeal, baking powder and salt ; stir into butter mixture. Stir in raisins, pine nuts and apricots.
Drop by 1 tbsp (15 mL), about 3 inches (8 cm) apart, onto parchment paper–lined baking sheets. With lightly floured bottom of measuring cup or glass, press to scant 1/2-inch (1 cm) thickness.
Bake in 350°F (180°C) oven until golden brown, 10 to 12 minutes. Let cool on pans for 5 minutes; transfer to racks and let cool completely.
