Delightful wintry-looking cookies make great gifts throughout the holidays. How you decorate them is limited only by your imagination as you learn to mix, match and play with icing techniques.

Method

 

Tint half of the icing blue. Transfer half each of the blue and remaining white icing to separate bowls. Thin 1 bowl of each colour with 1 to 2 tsp water until thin enough to flow smoothly through small icing tip. Place plastic wrap directly on surface of thin icing to prevent drying out.

To Outline Cookies: Using piping bag fitted with small plain tip, pipe thick white or blue icing in outline around cookies. Let dry for 20 to 30 minutes.

To Flood Outlined Cookies: Pipe or spoon thinned white or blue icing onto centre of cookie. Using toothpick or skewer, spread to piped edges; burst any air bubbles. Let dry for 2 to 3 minutes.

To Marble Flooded Cookies: Pipe stripes, dots or circles of contrasting colour onto flooded cookies while still wet. Draw toothpick or skewer through piped designs to swirl and marble. Let dry for 2 to 3 minutes.

Dip surface of cookie into coarse sugar; let dry completely.

If desired, pipe thick white or blue icing in snowflake designs over sugar surface.

Makes 48 cookies.
