Method
In small saucepan, combine orange juice, 2 tbsp honey and sugar; bring to boil. Cook, stirring, until sugar is dissolved. Reduce heat; cover and simmer for 10 minutes. Set aside.
In medium bowl, using electric mixer, beat mascarpone, cream and the remaining honey until smooth and creamy. (Make-ahead: Can be covered and refrigerated for up to 1 day.)
Preheat grill to medium heat; grease perforated grill pan. In large bowl, toss fruit with melted butter; transfer to grill pan. Close lid and grill until golden, turning often, about 12 minutes. Divide fruit among 4 plates; drizzle with orange juice syrup. Top with mascarpone mixture. Sprinkle with chopped pistachios.
