In bowl, toss together apples, cherries, brandy and lemon juice; let stand until liquid is absorbed, about 30 minutes.Streusel: Meanwhile, in bowl, beat together butter, sugar and salt until fluffy; stir in flour until combined. Remove 1-1/4 cups (300 mL) and refrigerate. Press remaining mixture into 13- x 9-inch (3.5 L) parchment paper–lined or greased metal cake pan; refrigerate for
15 minutes.
Prick base all over with fork. Bake in 350°F (180°C) oven until golden, about 17 minutes. Let cool.
In bowl, beat cream cheese with sugar; beat in egg and vanilla until smooth. Spread over base; sprinkle with fruit mixture. Sprinkle with reserved streusel.
Bake in 350°F (180°C) oven until light golden, about 30 minutes. Let cool on rack. Refrigerate until set, about 1 hour. (Make-ahead: Refrigerate in airtight container for up to 3 days.) Cut into bars.
