Method
In heatproof bowl over saucepan of hot (not boiling) water, melt chocolate. Drop by scant 1 tsp (5 mL), 1 inch (2.5 cm) apart, onto waxed paper-lined baking sheet; tap pan on counter to spread evenly.
Top each with 3 bits of crystallized ginger; refrigerate until set, about 30 minutes. (Make-ahead: Layer between waxed paper in airtight container; refrigerate for up to 2 weeks.)
