Need a change from the traditional holiday rum ball? These boozy bites will fill the bill. The bourbon flavour mellows as the candies stand, so they're even better the day after you make them. Naturally, you can substitute rum for bourbon, if you like.

Method

In food processor, pulse cookies until in coarse crumbs. Add pecans; pulse until in fine
crumbs. Transfer to bowl; whisk in cocoa powder.

Whisk bourbon with corn syrup; drizzle over crumb mixture, stirring until mixture clumps together.

With slightly moist hands, roll by 2 tsp into balls; roll each ball in chocolate sprinkles to coat. Place on waxed paper–lined baking sheet or in candy cups; refrigerate until firm, 15 to 20 minutes. (Make-ahead: Layer between waxed paper in airtight container and refrigerate for up to 1 week.)
