Wild blueberry and goat cheese salad with honey vinaigrette
After a trip to the
Brickworks farmer's market this weekend, I came back, arms overstuffed, with all the bounty this time of year has to offer: buttery lettuce, cherries, plums and a generous amount of wild blueberries!
Wild blueberries always feel like such a treat: they're incredibly sweet and although they're more expensive than regular blueberries, they're totally worth the splurge. They also happen to be high in healthy antioxidants, which is a great added bonus.
I love baking with them, or just eating them straight-up, but this salad may very well be my new favourite way to enjoy them!
Paired with creamy goat cheese and a slightly sweet honey vinaigrette, this dish makes the perfect light summer lunch. Serve it with grilled chicken and a few slices of garlic-rubbed crusty baguette.
Wild blueberry and goat cheese salad with honey vinaigrette Makes: 2 servings
• 3 cups lightly packed mixed lettuce
• 50 g crumbled soft goat cheese
• 1/3 cup wild blueberries
• 1 tbsp extra virgin olive oil
• 2 tsp lemon juice
• 1/4 tsp liquid honey
• Pinch each salt and pepper In serving bowl, combine lettuce, goat cheese and wild blueberries. In small bowl, whisk together olive oil, lemon juice, honey, salt and pepper. Drizzle over salad, tossing to coat.
