The Foodie-file: Bocuse D’or

David Wong. Bocuse D’orBocuse D’or is the original iron chef competition. Started in 1987, every two years international chefs from around the 24 countries are chosen to compete in Lyon for the coveted title. The chefs are chosen three years before the competition, have mentor chef to work with and an apprentice that trains with and assist the chef. The current team is gearing up for competition in January 2009 in Lyon France. Our homegrown contender is David Wong of Vancouver. The championship is a hard one to crack. At fourth place, Robert Sulatycky, Wong's mentor chef, is the highest placing North American chef. The competition champions young talent and so requires that an apprentice twenty two years old or younger accompanies the chef. Wong's team is rounded out by the very talented apprentice Grace Pinada. Moxie’s grill hosted an event on April 28th introducing David Wong and his troupe and showcase their talents. It was a chance to meet the team and tastes David’s wares. Based on our preview dinner, it looks like Wong has a good chance of surpassing his mentor and bringing hoe the gold. Good Luck in the competition team Canada! Here are a couple of the complex menu items from the Moxie's dinner event.
