S'mores smorgasbord!

It's that time of  year again when families pack up their hiking shoes, tents and sleeping bags to venture into the great outdoors. Camping season is upon us, encouraging friends and families to huddle around campfires. Whether your gathering is at a campsite, on the beach or in your own backyard, there are a few things that everyone considers campfire traditions. My hands-down favourite has to be the beloved s'more! Sure, the roasted weenies are great too and the ghost stories are always fascinating, but if there is no promise of s'mores I'd rather be indoors. A s'more is a supersweet treat that sandwiches a toasted marshmallow and chocolate between two graham crackers. Simple to make, sinful to eat. The notion behind the name is that the gooey sweetness is so addictive you can't help but want "some more." I have assembled some ideas to create a twist on the classic chocolate and graham cracker version. The roasted marshmallow remains the same and the other components are interchangeable. To make your own s'mores smorgasbord... Master the toasted marshmallow. Work with one marshmallow at a time. Use a clean hard wooden stick (avoid evergreens and resinous trees), a roasting fork or even a non-coated metal hanger that's been unwound. Insert your stick through the marshmallow. Rotate the marshmallow over your heat source (campfire, coals, gas burner or fireplace), but not over open flame as the marshmallow will catch fire and blacken quickly. You'll get a better roast toward the lower part of the heat source.
Lightly toasted on the outside. Warm and gooey on the inside.
  Have a selection of bases and fillers standing by. Spread or top the bases with the spreads or chocolate, sandwich the hot marshmallow in between and gently press together.  
Possible additions: Sour cherry jam, peanut butter and dulce de leche (top row); chocolate hazelnut spread and blueberry preserves (bottom row).
  Allow to cool 30 seconds or more to avoid burning.
Choice of chocolate: Caramel-filled milk chocolate, milk chocolate wafers, nougat-and-honey dark chocolate, milk chocolate with with sliced almonds and good-quality dark chocolate.
 
Tasty combo suggestion...
Gingersnap and blueberry preserves, graham cracker and sour cherry jam, and matzo cookie and dulce de leche (top row); chocolate wafer and peanut butter, and digestive cookie and chocolate hazelnut spread (bottom row).
