Vanilla Plum Swirl Pudding Pops are an adult treat that we enjoyed a lot. Make a big batch when plums are in seasons. The plum swirl only takes minutes to make and it's so good. Always have these pops in the freezer for TGIF!
To make the vanilla pudding, whisk sugar with cornstarch in a saucepan. Scrape seeds from vanilla beans. Place into saucepan and add pod. Add milk and brandy and whisk well. Cook over medium heat, stirring continuously until just steaming. Watch carefully, you don't want the milk to burn at the bottom of the saucepan.
Next step is to whisk the eggs with salt in a medium bowl. Add half of the hot milk mixture and whisk well. Add this mixture into saucepan, cook over medium heat whisking constantly. The vanilla pudding is ready when it has thickened, it will take between 4 to 7 minutes.
Immediately strain into clean bowl using a fine sieve. At this point your vanilla pudding needs to be refrigerated until chilled, about 2-3 hours. Make sure that you place a plastic wrap directly on surface. This will prevent a thick 'skin' from forming.
To make the plum swirl, place plums, sugar and 3 tbsp water in a medium saucepan. Bring to boil over medium heat. Simmer for 12 minutes stirring occasionally. After 12 minutes the plums should have broken down and will have the texture of jam. Strain the plum swirl into a bowl using a fine sieve and stir in lemon juice. Before making your pops you will need to refrigerate for about 45 minutes. For the recipe set aside 1 cup of the plum mixture.
To make the pops: Spoon egg mixture and then plum mixture. Repeat until your ice-pop moulds are full. Place in freezer and your pops will be ready to eat in about 5 hours. You can freeze them for up to 4 days but you will probably eat them in couple days. If you are making these
