Kitchen Tip: What to do with leftover wine

I know, I know. Who has leftover wine? But for those rare occasions when you do, we have the solution. Freeze it! More specifically, freeze your leftover wine in ice cube trays. Depending on the size of your trays, each cube will hold about 2 tbsp of liquid. Due to the alcohol content in the wine, it may take a little longer to freeze, and will not be as hard as ice cubes. When frozen, pop the cubes out and into a resealable freezer bag. Once frozen, the wine is not the greatest for drinking, but is perfect for cooking. Reach for the convenient wine cubes next time you are making a sauce, or this delicious Orecchiette with Pork Ragù; just add an extra minute of cooking time to allow the wine to melt. Keep your wine cubes on hand in the freezer and try these other recipes featuring wine: Roast Prime Rib with Rosemary Red Wine Jus Lie Pan-Seared Steaks with Red Wine Sauce Roast Leg of Lamb with Red Wine Jus   Photography by Leah Kuhne (top); Ryan Brook (bottom).
