Photography by Leah Kuhne[/caption] Rarely do recipes call for an
entire can of tomato paste, but the
intense tomato flavour that it imparts is crucial. Tomato paste gives that background savoury, earthy,
depth of flavour that stews, sauces and soups have even when the finished dish doesn't taste like tomatoes. So, instead of avoiding recipes that call for less than a whole can of tomato paste, just
freeze the rest for another day. Scoop the remaining tomato paste into a small
resealable freezer bag and place in the freezer. Or, drop by tablespoonfuls onto a parchment paper-lined baking tray and
freeze until firm. Then transfer the frozen paste to a resealable bag. Next time you are making a recipe that calls for tomato paste, just let the frozen paste
thaw in the fridge before using.
