Ingredient spotlight: corn tortillas
I've mentioned here before that
shrimp tacos
are one of my weeknight favourites when I'm looking for something quick, healthy and filling for dinner. However, ever since I started using corn tortillas instead of the more generic white flour kind, simple everyday tacos have become that much more special (and delicious!). They're so good, in fact, that I have trouble getting myself to buy the flour tortillas if I can't get my hands on corn ones.
Made using
corn flour, corn tortillas are more chewy and textured than flour tortillas. You can use them in every same application as flour tortillas but
instead of being a blank canvas, they add layers of flavour to whatever you're making with them. They're usually a little harder to find than the classic flour kind, but they're well worth the hunt, so keep an eye out for them at the store!
