Fairmont Waterfront's Herb Garden
Around the corner from the pool of the The Fairmont Waterfront Hotel in Vancouver is a beautiful ever-changing herb garden. The centre piece is an engaging bay leaf topiary surrounded by countless herbs, tiny strawberries, rhubarb and whatever else the gardner sees fit, Some of the rooms of the hotel open out onto the fragrant garden in the city. When I visited I was also privy to some new information, the Fairmont is putting in a bee colony to help boost the waning bee population. The bees will sleep in the colony at night and head out to Stanley park during the day to collect pollen – so maybe soon Fairmont chefs will be harvesting their own honey as well!
