Dragons Breath Blue Cheese
That Dutchmans Farm in Upper Economy, Nova Scotia is making this fine blue cheese. Canadian Living Food Editor Gabrielle Bright brought back this treat for the test kitchen to sample after a recent excursion down east.
This barely blue cheese has a black wax rind. Cutting the top off and reveals the buttery pale yellow cheese, the label suggests that you mix in any of the briny liquid around the edges. The cheese itself ranges from soft and creamy to hard and buttery.
That Dutchman's Farm is owned and operated by Maja and Willem van den Hoek and is a proud family run business. They hail from the Netherlands which is evidence in their award winning Farmstead Gouda.
The cheese is available in Nova Scotia but alas is illegal to sell in Ontario. However it is available by mail order if you want to try it - I would highly recommend that you do.
