Chicago eats: brunch at The Publican
If you've visited Chicago before, you'll know what I mean when I say it's
filled to the brim with amazing food. As I was planning for a long weekend in the windy city, the hardest part was narrowing down the long list of restaurants to try. But narrow it I did, and I can now share a new favourite Chicago brunch spot:
The Publican! The restaurant, renowned for its pork dishes, is full of
rustic charm, with a large walnut communal table in the centre, mismatched plates, generous portions and some of the best food I've had in a while. Run by acclaimed executive chef and owner Paul Kahan, who was awarded a
James Beard Award for Outstanding Chef in 2013, the restaurant is one of the hottest spots in town, but still maintains a down-to-earth, fun vibe.
Now for the food! First let's talk bacon.
The Publican serves their signature maple syrup-braised bacon as
fork-tender, endlessly indulgent, salty and sweet pieces that melt in your mouth. One order is more than enough for two (or three) as a side dish, but you shouldn't leave the premises without giving it a try. Other
highlights are their waffles -- they're incredibly light and airy (nothing like the denser waffles so many brunch spots serve) and are currently topped with blueberry jam and honey butter. Their red-wine-poached eggs are also a must-try, they're a take on
eggs Benedict, where the eggs are gently poached in red wine and then served with prosciutto and sourdough bread.
